White Chocolate Cloister Honey Toffee

One of our passions is always local and you can't get much more local to us than the neighborhood down the block and their excellent bee keepers at Cloister Honey. Their local wildflower honey is excellent. With a cloying aroma and hints of hops and flowers if you are a fan of honey you're sure to like this toffee.

The toffee is a mid-range sweet, which can conflict with many chocolates for topping it.  We did a week of taste tests from white chocolate all the way to 80%.  Both extremes were very popular because they allowed the flavor of the honey to shine. In the end we decided to coat it in our creamy white chocolate and save the 80% for a future toffee (can you sense Andy's evil grin?).

Even if you aren't a white chocolate fan we want you to put your bias aside and give in to this creation. You might not be able to imagine how good it is, but it's very tasty.
