Althea, the passionate chocolatier behind Thea Broma Chocolate, has crafted a chocolate bar that feels familiar yet distinct. Althea worked with us years ago—always full of energy and creativity. It’s wonderful to see her venture into her own chocolate journey, and we couldn't resist trying her latest work. This 70% Grenada bar is a great introduction.

Appearance and Temper

The first thing you notice about the Thea Broma 70% Grenada is its clean, patterned look. The shine on this bar is beautiful, suggesting excellent tempering. The snap lives up to this expectation—sharp and satisfying—the kind of texture that speaks to well-executed craftsmanship.

Aroma and Taste

The aroma is subtle but clean, inviting without overwhelming. On the first bite, I found notes that danced from buttery to hints of cashew, and then to that mouthwatering umami. As I continued tasting, I discovered delicate traces of raisin and pear. These flavors evolve nicely, never overpowering but always complementing the cocoa's natural depth.

The body of the chocolate has an excellent balance—it coats the palate comfortably but doesn't linger too thickly. Creamy, yet somehow light, this bar is the opposite of heavy-handed.

Aftertaste

The finish is equally enjoyable, with a clean cocoa aftertaste, touched with the faintest traces of raisin, cashew, and a whisper of pecan. It's these subtle notes that keep you wanting to reach for another piece—nothing cloying, just a beautiful, balanced finish.

Overall Thoughts

This is a bar that feels like a wonderful baseline for what a well-made dark chocolate should be: clean, balanced, with a few delightful hints of something more—dark berries and nuts making subtle appearances. It’s a great example of chocolate that doesn’t need to scream to be heard, and that’s exactly what makes it so enjoyable.
